Ingredients

  • 1/2 cup (125 ml) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (125 ml) butter, softened
  • 1/2 cup (125 ml) sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup (125 ml) ricotta cheese
  • 1/2 cup (125 ml) candied fruit
  • 1/2 cup (125 ml) marzipan

Directions

  1. Preheat oven to 350° F (175° C). Grease and flour an 8-inch (20 cm) springform pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Add the dry ingredients to the wet ingredients and mix until just combined.
  5. Spread the batter into the prepared pan and bake for 25 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the cake to cool completely.
  7. In a medium bowl, mix together the ricotta cheese, candied fruit, and marzipan.
  8. Spread the mixture over the cooled cake.
  9. Chill in the refrigerator for at least two hours before serving.
