- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup granulated sugar
- 1/2 cup (1 stick) unsalted butter, softened
- 2 large eggs
- 2 tablespoons freshly grated lemon zest
- 1/2 teaspoon vanilla extract
- 1/4 cup freshly squeezed lemon juice
- 1/2 cup powdered sugar
Directions
- Preheat oven to 375°F (190°C). Line two baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, using an electric mixer, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then add the lemon zest, lemon juice, and vanilla extract.
