Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup (1 stick) unsalted butter, softened
  • 2 large eggs
  • 2 tablespoons freshly grated lemon zest
  • 1/2 teaspoon vanilla extract
  • 1/4 cup freshly squeezed lemon juice
  • 1/2 cup powdered sugar

Directions

  1. Preheat oven to 375°F (190°C). Line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, using an electric mixer, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then add the lemon zest, lemon juice, and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients and mix until combined.
  5. Add the powdered sugar to a shallow bowl. Form the dough into 1-inch balls and roll them in the powdered sugar. Place the dough balls on the prepared baking sheets, about 2 inches apart.
  6. Bake for 10-12 minutes, or until the edges are golden brown. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
