Ingredients

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon red pepper flakes
  • 1 (14-ounce) can diced tomatoes
  • 4 cups vegetable broth
  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Directions

  1. Heat the olive oil in a large saucepan over medium heat. Add the onion and cook until softened, about 5 minutes.
  2. Add the garlic, cumin, smoked paprika, and red pepper flakes and cook for 1 minute.
  3. Add the tomatoes and vegetable broth and bring to a boil. Reduce the heat and simmer for 10 minutes.
  4. Add the chickpeas and simmer for an additional 5 minutes.
  5. Stir in the parsley and season with salt and pepper to taste.
  6. Serve warm.
