Ingredients

  • 1/2 cup (1 stick) butter
  • 1/2 cup light corn syrup
  • 1 teaspoon vanilla extract
  • 3 cups granulated sugar
  • 1 cup creamy peanut butter
  • 6 cups crispy rice cereal
  • 1/2 cup chopped peanuts (optional)

Directions

  1. Melt the butter in a large saucepan over medium heat.
  2. Stir in the corn syrup, vanilla, and sugar and bring to a boil.
  3. Once boiling, reduce the heat and simmer for 3 minutes, stirring constantly.
  4. Remove from the heat and stir in the peanut butter until smooth.
  5. Stir in the cereal and peanuts until evenly mixed.
  6. Press the mixture into a greased 9x13-inch baking pan.
  7. Let cool for at least one hour before cutting into bars.
