Ingredients

  • 2 cups all-purpose flour
  • 1 cup quick-cooking oats
  • 1/4 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter or margarine, melted
  • 2 eggs, beaten
  • 1 cup milk
  • 1/2 cup honey
  • 1/2 cup dried cranberries

Directions

  1. Preheat oven to 375°F (190°C). Grease a 9x5-inch loaf pan.
  2. In a large bowl, combine flour, oats, sugar, baking powder, baking soda, and salt. Mix together.
  3. In a separate bowl, combine butter, eggs, milk, and honey. Mix together until well blended.
  4. Add wet ingredients to dry ingredients and mix until just combined. Fold in cranberries.
  5. Pour batter into prepared pan and spread evenly.
  6. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let cool for 10 minutes before removing from pan.
