Ingredients

  • 1 cup uncooked long-grain white rice
  • 2 tablespoons butter
  • 1/2 cup chopped cashews
  • 1/2 cup raisins
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cardamom
  • 1/2 teaspoon ground cloves
  • 2 cups vegetable or chicken broth
  • 1/4 cup chopped fresh cilantro leaves, for garnish

Directions

  1. In a large skillet, melt the butter over medium heat. Add the cashews and raisins and cook, stirring, for 2 minutes.
  2. Add the rice, cinnamon, cardamom, and cloves and stir to combine. Cook for 2 minutes more.
  3. Add the broth and bring to a boil. Reduce the heat to low, cover, and simmer for 20 minutes, or until the rice is tender and the liquid is absorbed.
  4. Remove from the heat, fluff with a fork, and serve, garnished with the cilantro leaves.
