Ingredients

  • 4 bone-in, skin-on chicken thighs
  • Salt and black pepper, to taste
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon paprika
  • 1/2 cup chicken broth
  • 2 tablespoons unsalted butter
  • Fresh parsley, chopped (for garnish)

Directions

  1. Preheat the oven to 425°F (220°C).
  2. Season the chicken thighs generously with salt and pepper on both sides.
  3. Heat the olive oil in a cast iron skillet over medium-high heat.
  4. Place the chicken thighs skin side down in the skillet and cook for 4-5 minutes, or until the skin is golden brown and crispy.
  5. Flip the chicken thighs and cook for an additional 2 minutes.
  6. Remove the chicken thighs from the skillet and set aside.
  7. In the same skillet, add the minced garlic, dried thyme, dried rosemary, and paprika. Stir for 1 minute, or until fragrant.
  8. Pour in the chicken broth and scrape the bottom of the skillet to deglaze.
