Ingredients

  • 2 bell peppers, cut into thin strips
  • 1 onion, cut into thin strips
  • 2-3 zucchini, cut into thin strips
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • Salt and pepper, to taste

Directions

  1. Preheat a grill over medium-high heat.
  2. In a medium bowl, combine the bell peppers, onion, and zucchini and toss with olive oil, garlic powder, paprika, cumin, salt, and pepper.
  3. Place the vegetables on the preheated grill and cook for 8-10 minutes, flipping once, until lightly charred and tender.
