Caldo Verde is a traditional Portuguese soup made with potatoes, kale, and chorizo. This comforting and flavorful dish is perfect for a chilly evening. It is easy to make and requires simple ingredients that are readily available in most kitchens. The combination of creamy potatoes, tender kale, and smoky chorizo creates a hearty and satisfying soup that will warm you from the inside out. Whether you are looking to explore new cuisines or simply crave a delicious and nutritious meal, Caldo Verde is the perfect choice.

Ingredients

  • 5 medium potatoes, peeled and diced
  • 1 large onion, chopped
  • 3 cloves of garlic, minced
  • 6 cups chicken or vegetable broth
  • 1 bunch of kale, stems removed and thinly sliced
  • 8 oz chorizo, sliced
  • Salt and pepper to taste
  • Olive oil for drizzling

Directions

  1. In a large pot, heat olive oil over medium heat. Add the onion and garlic and sauté until they become soft and aromatic.
  2. Add the diced potatoes to the pot and stir to coat them with the onion and garlic mixture. Cook for about 5 minutes, stirring occasionally.
  3. Pour in the chicken or vegetable broth and bring to a boil. Reduce the heat and let the soup simmer for about 15-20 minutes, or until the potatoes are tender.
  4. Using an immersion blender or a regular blender, puree the soup until smooth and creamy. If using a regular blender, work in batches and be careful to avoid splashing hot liquid.
  5. Return the pureed soup to the pot. Stir in the sliced kale and cook for an additional 5 minutes, or until the kale is wilted and tender.
  6. While the kale is cooking, heat a small skillet over medium heat. Add the sliced chorizo and cook until it becomes crispy and releases its oils.
  7. Remove the chorizo from the skillet and place it on a paper towel-lined plate to drain excess oil.
  8. Season the soup with salt and pepper to taste. Ladle the soup into bowls and garnish with the crispy chorizo.
  9. Drizzle a little bit of olive oil over the top for added flavor and serve hot.
