Ingredients
- 5 medium potatoes, peeled and diced
- 1 large onion, chopped
- 3 cloves of garlic, minced
- 6 cups chicken or vegetable broth
- 1 bunch of kale, stems removed and thinly sliced
- 8 oz chorizo, sliced
- Salt and pepper to taste
- Olive oil for drizzling
Directions
- In a large pot, heat olive oil over medium heat. Add the onion and garlic and sauté until they become soft and aromatic.
- Add the diced potatoes to the pot and stir to coat them with the onion and garlic mixture. Cook for about 5 minutes, stirring occasionally.
- Pour in the chicken or vegetable broth and bring to a boil. Reduce the heat and let the soup simmer for about 15-20 minutes, or until the potatoes are tender.
- Using an immersion blender or a regular blender, puree the soup until smooth and creamy. If using a regular blender, work in batches and be careful to avoid splashing hot liquid.
- Return the pureed soup to the pot. Stir in the sliced kale and cook for an additional 5 minutes, or until the kale is wilted and tender.
- While the kale is cooking, heat a small skillet over medium heat. Add the sliced chorizo and cook until it becomes crispy and releases its oils.
- Remove the chorizo from the skillet and place it on a paper towel-lined plate to drain excess oil.
- Season the soup with salt and pepper to taste. Ladle the soup into bowls and garnish with the crispy chorizo.
- Drizzle a little bit of olive oil over the top for added flavor and serve hot.
