Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 2 cups buttermilk
  • 4 tablespoons butter, melted
  • 2 ripe bananas, mashed
  • Butter or oil for cooking

Directions

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. Set aside.
  2. In a separate bowl, whisk together the eggs, buttermilk, melted butter, and mashed bananas.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  4. Heat a large skillet or griddle over medium heat and lightly grease with butter or oil.
  5. Pour 1/4 cup of the pancake batter onto the skillet and cook until golden brown, about 2-3 minutes. Flip and cook for another 1-2 minutes.
  6. Repeat with the remaining batter, adding more butter or oil if needed.
