Bryan's Spicy Red Lentil Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper
  • 1 cup dried red lentils, rinsed and drained
  • 4 cups vegetable broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup plain Greek yogurth
  • 2 tablespoons freshly chopped cilantro leaves
    • Directions

      1. Heat the olive oil in a large pot over medium heat.
      2. Add the onion and garlic and cook, stirring occasionally, until the onion is softened, about 5 minutes.
      3. Stir in the cumin, chili powder, paprika, coriander, turmeric, and cayenne pepper and cook for 1 minute.
      4. Add the lentils and broth and bring to a boil. Reduce the heat to low and simmer, partially covered, until the lentils are tender, about 20 minutes.
      5. Stir in the salt and pepper.
      6. Remove from the heat and let cool slightly.
      7. Using an immersion blender, puree the soup until smooth.
      8. Stir in the yogurt and cilantro.
      9. Serve warm.
