Ingredients
- 2 large bell peppers, sliced
- 1 large onion, sliced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- 4 slices of your favorite bread
- 1/2 cup shredded cheese
- 1/4 cup mayonnaise
Directions
- Preheat broiler to high.
- In a large bowl, mix together bell peppers, onion, olive oil, garlic powder, Italian seasoning, salt, and pepper.
- Spread the mixture onto a baking sheet lined with parchment paper and broil for 7-10 minutes, or until vegetables are lightly charred.
- Meanwhile, spread mayonnaise onto one side of each slice of bread.
- Remove vegetables from the oven and top each slice of bread with vegetables and shredded cheese.
- Place the sandwiches on the baking sheet and broil for 3-5 minutes, or until cheese is melted and bread is golden brown.
- Serve warm.
