Ingredients
2 large bell peppers, sliced
1 large onion, sliced
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon Italian seasoning
Salt and pepper, to taste
4 slices of your favorite bread
1/2 cup shredded cheese
1/4 cup mayonnaise
Directions
Preheat broiler to high.
In a large bowl, mix together bell peppers, onion, olive oil, garlic powder, Italian seasoning, salt, and pepper.
Spread the mixture onto a baking sheet lined with parchment paper and broil for 7-10 minutes, or until vegetables are lightly charred.
Meanwhile, spread mayonnaise onto one side of each slice of bread.
Remove vegetables from the oven and top each slice of bread with vegetables and shredded cheese.
Place the sandwiches on the baking sheet and broil for 3-5 minutes, or until cheese is melted and bread is golden brown.
Serve warm.
