Ingredients
- 1 block of extra-firm tofu, pressed and diced
- 2 tablespoons of olive oil
- 1 cup of sliced mushrooms
- 1/2 cup of chopped onion
- 1/2 cup of chopped bell pepper
- 3 cloves of minced garlic
- 1/4 teaspoon of red pepper flakes
- 1/4 cup of white wine
- 2 tablespoons of fresh lemon juice
- 2 tablespoons of vegan butter
- 1/2 teaspoon of sea salt
- 1/4 teaspoon of freshly ground black pepper
- 2 tablespoons of chopped fresh parsley
Directions
- Heat the olive oil in a large skillet over medium-high heat.
- Add the diced tofu and cook until it is golden brown. Remove from the heat.
- Add the mushrooms, onion, bell pepper, garlic, and red pepper flakes. Cook for 5 minutes, stirring occasionally.
- Add the white wine, lemon juice, vegan butter, and salt and pepper. Cook for 3 minutes, stirring occasionally.
- Return the cooked tofu to the skillet and cook for an additional 3 minutes, stirring occasionally.
- Serve the scampi over cooked pasta or rice, garnished with the chopped parsley.
