Ingredients

  • 1 block of extra-firm tofu, pressed and diced
  • 2 tablespoons of olive oil
  • 1 cup of sliced mushrooms
  • 1/2 cup of chopped onion
  • 1/2 cup of chopped bell pepper
  • 3 cloves of minced garlic
  • 1/4 teaspoon of red pepper flakes
  • 1/4 cup of white wine
  • 2 tablespoons of fresh lemon juice
  • 2 tablespoons of vegan butter
  • 1/2 teaspoon of sea salt
  • 1/4 teaspoon of freshly ground black pepper
  • 2 tablespoons of chopped fresh parsley

Directions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the diced tofu and cook until it is golden brown. Remove from the heat.
  3. Add the mushrooms, onion, bell pepper, garlic, and red pepper flakes. Cook for 5 minutes, stirring occasionally.
  4. Add the white wine, lemon juice, vegan butter, and salt and pepper. Cook for 3 minutes, stirring occasionally.
  5. Return the cooked tofu to the skillet and cook for an additional 3 minutes, stirring occasionally.
  6. Serve the scampi over cooked pasta or rice, garnished with the chopped parsley.
