Ingredients
1 block of extra-firm tofu, pressed and diced
2 tablespoons of olive oil
1 cup of sliced mushrooms
1/2 cup of chopped onion
1/2 cup of chopped bell pepper
3 cloves of minced garlic
1/4 teaspoon of red pepper flakes
1/4 cup of white wine
2 tablespoons of fresh lemon juice
2 tablespoons of vegan butter

Directions
Heat the olive oil in a large skillet over medium-high heat.
Add the diced tofu and cook until it is golden brown. Remove from the heat.
Add the mushrooms, onion, bell pepper, garlic, and red pepper flakes. Cook for 5 minutes, stirring occasionally.
Add the white wine, lemon juice, vegan butter, and salt and pepper. Cook for 3 minutes, stirring occasionally.
Return the cooked tofu to the skillet and cook for an additional 3 minutes, stirring occasionally.
Serve the scampi over cooked pasta or rice, garnished with the chopped parsley.
