Ingredients
- 1/2 cup butter
- 2 cups mashed potatoes
- 1/2 cup grated cheese
- 1 cup chopped broccoli

- 1/4 cup diced bell pepper
- 4 eggs

Directions
- Preheat the oven to 350°F (175°C). Grease a 9-inch pie plate with butter.

- In a separate bowl, combine the broccoli, onion, and bell pepper. Spread the mixture over the mashed potato crust.

- Bake in the preheated oven for 30 minutes, or until the quiche is golden brown and cooked through.
