Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 3 cups chopped broccoli
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste

Directions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion and garlic and cook for 3-4 minutes, until the onion is soft and translucent.
  3. Add the vegetable broth, broccoli, thyme, oregano, salt and pepper.
  4. Bring the soup to a boil, then reduce the heat and simmer for 15-20 minutes, until the broccoli is tender.
  5. Carefully transfer the soup to a blender and blend until smooth.
  6. Return the soup to the pot and simmer for a few more minutes.
  7. Serve hot and enjoy!
