Ingredients

  • 2 cups almond flour
  • 1/2 cup cocoa powder
  • 3/4 cup semi-sweet chocolate chips
  • 1/4 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 eggs
  • 1 teaspoon vanilla extract

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  2. In a medium bowl, combine almond flour, cocoa powder, chocolate chips, sugar, baking powder and salt. Stir until combined.
  3. In a separate bowl, whisk together eggs and vanilla. Add egg mixture to dry ingredients and stir until a dough forms.
  4. Divide dough into two equal pieces and shape each piece into a log about 8 inches long and 2 inches wide. Place logs on prepared baking sheet and bake for 25 minutes.
  5. Remove logs from oven and let cool for 15 minutes. Reduce oven temperature to 300 degrees F (150 degrees C).
  6. Slice logs into 1/2-inch thick slices and place slices back on baking sheet. Bake for an additional 15 minutes.
  7. Remove biscotti from oven and let cool completely before serving.
