Ingredients
- 1 tablespoon butter
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour
- 4 cups vegetable broth
- 1/2 teaspoon dried thyme
- 2 cups diced potatoes
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 2 cups chopped broccoli florets
- 1/2 cup heavy cream
- 1 cup shredded cheddar cheese
Directions
- Melt the butter in a large pot over medium heat. Add the onion and garlic and cook until the onion is translucent, about 5 minutes.
- Stir in the flour and cook for 1 minute.
- Add the vegetable broth, thyme, potatoes, salt, and pepper. Bring to a boil, reduce the heat to low, and simmer for 15 minutes.
- Add the broccoli and cook for an additional 5 minutes.
- Stir in the heavy cream and cheddar cheese. Cook until the cheese is melted, about 5 minutes.
- Serve warm.
