Ingredients

  • 2 pounds chicken thighs, boneless and skinless
  • 1/4 cup all-purpose flour
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup dark rum
  • 1/2 cup chicken broth
  • 1/4 cup brown sugar
  • 1/4 cup apple cider vinegar
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon paprika
  • 1 teaspoon ground ginger

Directions

  1. Preheat oven to 375°F (190°C).
  2. In a shallow bowl, combine the flour and some salt and pepper.
  3. Dredge the chicken in the flour mixture, shaking off any excess.
  4. In a large skillet over medium heat, heat the oil and brown the chicken on both sides, about 4 minutes per side.
  5. Transfer the chicken to a baking dish.
  6. In the same skillet, add the onion and garlic and sauté until softened, about 3 minutes.
  7. Add the rum to the skillet and cook for 1 minute.
  8. Add the chicken broth, brown sugar, vinegar, Worcestershire sauce, paprika, and ginger and stir to combine.
  9. Pour the sauce over the chicken and bake for 30 minutes, or until the chicken is cooked through.
  10. Serve the chicken with the sauce.
