Ingredients

  • 1 lb. of your favorite pasta noodles
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves of garlic, minced
  • 1 can of diced tomatoes
  • 1/2 cup of heavy cream
  • Salt and pepper to taste
  • Optional: Chopped fresh herbs like parsley or basil

Directions

  1. Bring a pot of salted water to a boil. Once boiling, add your favorite pasta noodles and cook until al dente.
  2. Meanwhile, heat the olive oil in a large skillet over medium heat. Add the diced onion and garlic and sauté until softened, about 3 minutes.
  3. Add the diced tomatoes to the pan and cook until heated through, about 5 minutes.
  4. Stir in the heavy cream, season with salt and pepper to taste, and reduce heat to low. Simmer for a few minutes until the sauce thickens.
  5. Drain the cooked pasta and add it to the pan with the sauce. Stir to combine and heat through. Serve with fresh herbs, if desired.
