Ingredients

  • 2 1/2 cups all-purpose flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1/2 cup milk
  • 1/4 cup freshly squeezed lemon juice
  • 1/4 cup freshly squeezed orange juice
  • 1 tbsp lemon zest
  • 1 tbsp orange zest
  • Food coloring (red, orange, yellow, green, blue, purple)
  • 2 cups heavy cream
  • 1/4 cup powdered sugar
  • Assorted fresh fruit for garnish

Directions

  1. Preheat the oven to 350°F and grease and flour six 8-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream together the butter and sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition.
  5. Mix in the milk, lemon juice, orange juice, lemon zest, and orange zest.
  6. Divide the batter evenly into six bowls and color each bowl with a different color of food coloring.
  7. Pour each colored batter into its own prepared cake pan and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  9. In a large bowl, whip the heavy cream and powdered sugar until stiff peaks form.
  10. Assemble the cake by layering the colored cake layers with the whipped cream frosting in between each layer.
  11. Frost the top and sides of the cake with the remaining whipped cream and decorate with fresh fruit.
  12. Refrigerate the cake for at least 1 hour before serving to allow the flavors to meld together.
