Ingredients
- 1/2 cup applesauce
- 1 cup all-purpose flour
- 1 cup wheat bran
- 1/2 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup sugar
- 1/2 cup vegetable oil
- 1 egg
Directions
- Preheat oven to 375°F (190°C). Grease 12 muffin cups or line with paper muffin liners.
- In a medium bowl, mix together applesauce, flour, wheat bran, baking soda, baking powder, salt and sugar. In a separate bowl, mix together oil and egg.
- Stir the oil and egg mixture into the flour mixture until just blended. Do not overmix.
- Fill muffin cups two-thirds full and bake for 20 to 25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Let cool for 5 minutes before removing from muffin tin.
