Apple Cider Chicken and Mushrooms

Ingredients

  • 3 tablespoons butter
  • 1 onion, chopped
  • 1 pound fresh mushrooms, sliced
  • 1/2 cup apple cider
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1/4 cup all-purpose flour
  • 1 cup chicken broth

Directions

  1. Melt the butter in a large skillet over medium heat. Add the onion and mushrooms and cook, stirring occasionally, until the onion is soft and the mushrooms are golden brown, about 5 minutes.
  2. Add the apple cider, Worcestershire sauce, and thyme and cook for another 5 minutes.
  3. Season the chicken breasts with salt and pepper and dredge in the flour. Add to the skillet and cook until golden brown, about 3 minutes per side.
  4. Add the chicken broth to the skillet and bring to a simmer. Reduce the heat to low and cook, covered, for 20 minutes, or until the chicken is cooked through.
  5. Serve over rice or noodles.
