Ingredients

  • 4 lamb shanks
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 2 cups beef broth
  • 2 carrots, diced
  • 1 celery stalk, diced
  • 1 bay leaf
  • Salt and pepper to taste

Directions

  1. Heat olive oil in a large skillet over medium heat. Add the lamb shanks and cook until browned on all sides, about 10 minutes. Transfer to a slow cooker.
  2. Add the onion, garlic, thyme, oregano, beef broth, carrots, celery, and bay leaf to the slow cooker. Season with salt and pepper.
  3. Cover and cook on low for 8-10 hours, or on high for 4-6 hours, until the lamb is tender.
  4. Serve the lamb shanks over cooked vegetables and herbs, if desired.
