Ingredients
1/2 cup vegetable stock
1 tablespoon low-sodium soy sauce
1 teaspoon sesame oil
1/2 teaspoon garlic, minced

1/2 head bok choy, chopped
2 carrots, sliced
1 cup green beans, cut into 1-inch pieces
Salt and pepper, to taste
Directions
In a small bowl, combine the vegetable stock, soy sauce, sesame oil, garlic, and ginger. Set aside.
Heat the olive oil in a large skillet over medium-high heat. Add the bok choy, carrots, and green beans. Saute for 3 minutes, stirring frequently.
Pour the sauce over the vegetables and stir to combine. Cook for an additional 5 minutes, stirring occasionally, until the vegetables are tender.
Season with salt and pepper to taste.
Serve warm.
