Ingredients

  • 1/2 cup vegetable stock
  • 1 tablespoon low-sodium soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon garlic, minced
  • 1/4 teaspoon ground ginger
  • 2 tablespoons olive oil
  • 1/2 head bok choy, chopped
  • 2 carrots, sliced
  • 1 cup green beans, cut into 1-inch pieces
  • Salt and pepper, to taste

Directions

  1. In a small bowl, combine the vegetable stock, soy sauce, sesame oil, garlic, and ginger. Set aside.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the bok choy, carrots, and green beans. Saute for 3 minutes, stirring frequently.
  3. Pour the sauce over the vegetables and stir to combine. Cook for an additional 5 minutes, stirring occasionally, until the vegetables are tender.
  4. Season with salt and pepper to taste.
  5. Serve warm.
