- 1 onion, diced

- 1 cup black lentils
- 3 cups chicken or vegetable broth
- 1/2 pound smoked sausage, sliced
- 1/4 cup tomato paste
- 2 cups kale, chopped
- Salt and pepper to taste
- 1/4 cup freshly grated Parmesan cheese
Directions
- Heat the oil in a large pot over medium heat. Add the onions and garlic and cook for about 5 minutes, until the onions are softened and lightly browned.
- Add the oregano, thyme, basil, and red pepper flakes, and cook for another minute.
- Add the lentils and broth and bring to a boil. Reduce the heat and simmer for about 20 minutes, until the lentils are tender.
- Stir in the sausage, tomato paste, and kale, and cook for about 10 minutes, until the kale is wilted and the sausage is cooked through.
- Season with salt and pepper, and serve topped with Parmesan cheese.
