Ingredients

  • 4 medium beets, washed and trimmed
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons honey
  • 2 tablespoons white wine vinegar
  • 2 tablespoons minced shallots
  • 2 tablespoons minced fresh parsley

Directions

  1. Preheat oven to 375°F. Place the beets in a roasting pan. Drizzle with the olive oil, and sprinkle with the salt and pepper.
  2. Roast the beets in the preheated oven for 30 minutes, or until tender.
  3. Allow the beets to cool, then peel and cut into bite-sized cubes.
  4. In a small bowl, whisk together the honey, vinegar, shallots, and parsley.
  5. In a large bowl, combine the beets with the honey mixture. Toss to coat.
  6. Serve the honey beet salad at room temperature.
