Ingredients
- 4 medium beets, washed and trimmed
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons honey
- 2 tablespoons white wine vinegar
- 2 tablespoons minced shallots
- 2 tablespoons minced fresh parsley
Directions
- Preheat oven to 375°F. Place the beets in a roasting pan. Drizzle with the olive oil, and sprinkle with the salt and pepper.
- Roast the beets in the preheated oven for 30 minutes, or until tender.
- Allow the beets to cool, then peel and cut into bite-sized cubes.
- In a small bowl, whisk together the honey, vinegar, shallots, and parsley.
- In a large bowl, combine the beets with the honey mixture. Toss to coat.
- Serve the honey beet salad at room temperature.
