Grilled Shrimp, Pea Shoot and Bok Choy Salad with Asian Reduced Fat Dressing

Ingredients

  • 1 lb. large shrimp, peeled and deveined
  • 2 cups pea shoots
  • 2 heads of bok choy, sliced
  • 1/2 cup Asian reduced-fat dressing
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Directions

  1. Preheat grill to medium-high heat.
  2. Toss shrimp with olive oil, salt, and pepper and place on grill.
  3. Cook shrimp for 3 minutes per side until shrimp is cooked through.
  4. Remove from grill and let cool.
  5. In a large bowl, combine pea shoots and bok choy.
  6. Add dressing and toss to coat.
  7. Add grilled shrimp and toss to combine.
  8. Serve immediately.
