Big Joe's Venison Steak in Chestnut Sauce

Ingredients

  • 1 lb venison steak
  • 3 tablespoons butter
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup white wine
  • 1/2 cup beef stock
  • 1/2 cup heavy cream
  • 1/2 cup chestnuts, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste

Directions

  1. Heat a large skillet over medium-high heat. Add the butter and melt.
  2. Add the onion and garlic and cook until softened, about 3 minutes.
  3. Add the venison steak and cook for 5 minutes per side for medium rare.
  4. Remove the steak from the pan and set aside.
  5. Add the white wine to the pan and cook for 1 minute.
  6. Add the beef stock, heavy cream, chestnuts, and thyme and bring to a simmer.
  7. Return the steak to the pan and simmer for 10 minutes.
  8. Season with salt and pepper to taste.
  9. Serve the steak with the chestnut sauce.
