Ingredients
1 lb venison steak
3 tablespoons butter
1 onion, diced
2 cloves garlic, minced
1/2 cup white wine
1/2 cup beef stock
1/2 cup heavy cream
1/2 cup chestnuts, chopped
1 tablespoon fresh thyme, chopped
Salt and pepper to taste
Directions
Heat a large skillet over medium-high heat. Add the butter and melt.
Add the onion and garlic and cook until softened, about 3 minutes.
Add the venison steak and cook for 5 minutes per side for medium rare.
Remove the steak from the pan and set aside.
Add the white wine to the pan and cook for 1 minute.
Add the beef stock, heavy cream, chestnuts, and thyme and bring to a simmer.
Return the steak to the pan and simmer for 10 minutes.
Season with salt and pepper to taste.
Serve the steak with the chestnut sauce.
