This recipe combines the best of both worlds - a juicy and tender roast chicken with a crispy and golden skin. The secret lies in a simple yet flavorful marinade and a two-step cooking process. The result is a mouthwatering chicken that will impress your family and friends. Serve it with your favorite sides for a perfect weekday or weekend meal.

Ingredients

  • 1 whole chicken
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika

Directions

  1. In a small bowl, combine the olive oil, lemon juice, minced garlic, dried rosemary, dried thyme, salt, black pepper, and paprika. Mix well.
  2. Place the whole chicken in a large resealable plastic bag and pour the marinade over it. Seal the bag and refrigerate for at least 1 hour, or overnight for best results.
  3. Preheat the oven to 425°F (220°C).
  4. Remove the chicken from the marinade and place it on a greased roasting pan. Discard the marinade.
  5. Roast the chicken in the preheated oven for 15 minutes.
  6. Reduce the oven temperature to 375°F (190°C) and continue roasting for another 45-60 minutes, or until the internal temperature reaches 165°F (75°C) when tested with a meat thermometer.
  7. Remove the chicken from the oven and let it rest for 10-15 minutes before carving.
  8. Serve the juicy roast chicken with your favorite sides and enjoy!

Interesting Facts

  • Marinating the chicken helps to enhance the flavor and juiciness of the meat.
  • The initial high temperature during roasting helps to crisp up the skin, while the lower temperature allows the chicken to cook evenly and become tender.
  • Using a meat thermometer is the best way to ensure that the chicken is cooked to perfection and safe to eat.
