Ingredients

  • 2 cups of dried chickpeas
  • 1 large onion, chopped
  • 3 cloves of garlic, minced
  • 3 tablespoons of fresh parsley, chopped
  • 2 tablespoons of fresh cilantro, chopped
  • 1 teaspoon of ground cumin
  • 1 teaspoon of ground coriander
  • 1/2 teaspoon of baking powder
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1/4 cup of all-purpose flour
  • Oil for frying

Directions

  1. Soak the chickpeas in a bowl of water overnight.
  2. Drain and rinse the chickpeas, then place in a food processor.
  3. Add the onion, garlic, parsley, cilantro, cumin, coriander, baking powder, salt, and pepper to the food processor and pulse until the mixture is finely chopped.
  4. Add the flour and pulse a few more times until the mixture is combined.
  5. Shape the mixture into small balls and flatten slightly.
  6. In a large skillet, heat the oil over medium-high heat.
  7. Fry the falafels in batches until golden brown and crispy, about 5 minutes per side.
  8. Drain on paper towels and serve immediately.
