Ingredients

  • 2 cups beet greens, washed and chopped
  • 2 cups green beans, trimmed and cut into 1" pieces
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 large tomato, diced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Directions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion and garlic and sauté for about 5 minutes, until softened.
  3. Add the green beans and sauté for about 5 minutes.
  4. Add the beet greens and tomato and sauté for about 5 minutes, until the greens are wilted and the tomato is softened.
  5. Season with salt and pepper to taste.
  6. Serve hot.
