Ingredients

  • 2 tablespoons olive oil
  • 4 boneless, skinless chicken breasts
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup white rice
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup fresh basil, chopped

Directions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Season the chicken with salt and pepper and add to the skillet. Cook for 8-10 minutes or until golden brown and cooked through.
  3. Meanwhile, cook the rice according to the package directions.
  4. Add the onion and garlic to the skillet and cook until softened, about 5 minutes.

  6. Stir in the heavy cream and basil and cook for 5 minutes or until the sauce has thickened.
  7. Serve the chicken over the cooked rice, topped with the sauce.
