Ingredients
- 2 tablespoons olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 cups long grain white rice
- 3 cups chicken or vegetable stock
- 2 teaspoons turmeric
- Salt and pepper to taste
Directions
- Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion and garlic and cook until the onion is softened, about 5 minutes.
- Add the rice and stir to coat in the oil. Cook for 1 minute, stirring constantly.
- Add the stock, turmeric, salt and pepper. Stir and bring to a boil.
- Reduce the heat to low, cover, and simmer for 20 minutes.
- Remove from the heat and allow to sit for 10 minutes before fluffing with a fork and serving.
