Ingredients

  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups long grain white rice
  • 3 cups chicken or vegetable stock
  • 2 teaspoons turmeric
  • Salt and pepper to taste

Directions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion and garlic and cook until the onion is softened, about 5 minutes.
  2. Add the rice and stir to coat in the oil. Cook for 1 minute, stirring constantly.
  3. Add the stock, turmeric, salt and pepper. Stir and bring to a boil.
  4. Reduce the heat to low, cover, and simmer for 20 minutes.
  5. Remove from the heat and allow to sit for 10 minutes before fluffing with a fork and serving.
