Ingredients

  • 1 pound lean beef stew meat, cut into 1-inch cubes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 2 tablespoons tomato paste
  • 2 tablespoons all-purpose flour
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground black pepper
  • 1 bay leaf
  • 3 cups beef broth
  • 2 cups water
  • 1 cup pearl barley

Directions

  1. In a large pot over medium-high heat, cook the beef in a small amount of oil until browned. Add the onion, garlic, carrots, celery, tomato paste, flour, thyme, oregano, pepper, and bay leaf. Cook for 5 minutes, stirring occasionally.
  2. Add the beef broth, water, and barley. Bring to a boil, then reduce the heat and simmer for 75 minutes, stirring occasionally.
  3. Remove the bay leaf and serve.
