Ingredients
- 1 pound lean beef stew meat, cut into 1-inch cubes
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, peeled and sliced

- 1 teaspoon dried thyme
- 1 teaspoon dried oregano

- 1 bay leaf
- 3 cups beef broth
- 2 cups water
- 1 cup pearl barley
Directions
- In a large pot over medium-high heat, cook the beef in a small amount of oil until browned. Add the onion, garlic, carrots, celery, tomato paste, flour, thyme, oregano, pepper, and bay leaf. Cook for 5 minutes, stirring occasionally.
- Add the beef broth, water, and barley. Bring to a boil, then reduce the heat and simmer for 75 minutes, stirring occasionally.
- Remove the bay leaf and serve.
