1 pound lean beef stew meat, cut into 1-inch cubes
1 onion, chopped
2 cloves garlic, minced
2 carrots, peeled and sliced
2 celery stalks, sliced
2 tablespoons tomato paste
2 tablespoons all-purpose flour
1 teaspoon dried thyme
1 teaspoon dried oregano
1/2 teaspoon ground black pepper
1 bay leaf
3 cups beef broth
2 cups water
1 cup pearl barley
Directions
In a large pot over medium-high heat, cook the beef in a small amount of oil until browned. Add the onion, garlic, carrots, celery, tomato paste, flour, thyme, oregano, pepper, and bay leaf. Cook for 5 minutes, stirring occasionally.
Add the beef broth, water, and barley. Bring to a boil, then reduce the heat and simmer for 75 minutes, stirring occasionally.
Remove the bay leaf and serve.
