Ingredients

  • 2 ripe bananas, mashed
  • 1/2 cup sugar
  • 1/3 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1/2 cup chopped plums

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
  2. In a large bowl, mix together the mashed bananas, sugar, vegetable oil, eggs, and vanilla.
  3. In a separate bowl, sift together the baking powder, baking soda, salt, and flour. Gradually stir the dry ingredients into the banana mixture.
  4. Fold in the chopped plums. Pour batter into the prepared loaf pan.
  5. Bake for 45 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
