Ingredients
1 small pumpkin, peeled and cubed
2 tablespoons olive oil
2 tablespoons balsamic vinegar
1 clove garlic, minced
1 teaspoon dried basil
1 teaspoon dried oregano
Salt and pepper, to taste
4 ounces goat cheese, crumbled
Directions
Preheat oven to 350 degrees F.
In a large bowl, combine pumpkin cubes, olive oil, balsamic vinegar, garlic, basil, oregano, salt and pepper. Toss until the pumpkin is evenly coated.
Spread the pumpkin onto a baking sheet. Roast for 15 minutes.
Remove from oven and sprinkle the goat cheese over the pumpkin. Return to oven and roast for an additional 15 minutes, or until the pumpkin is tender.
Serve immediately.
