Ingredients
1 cup long-grain white rice
1 teaspoon salt
2 tablespoons olive oil
1 small onion, chopped
2 cloves garlic, minced
1/2 cup dried apricots, chopped
1/2 cup slivered almonds
1/2 cup chicken broth
1/4 cup white wine
Directions
Rinse the rice in a sieve and set aside.
Heat the oil in a large skillet over medium-high heat.
Add the onion and cook until softened, about 5 minutes.
Add the garlic and cook for 1 minute.
Stir in the apricots and almonds and cook for 1 minute.
Stir in the rice and salt and cook for 2 minutes.
Add the broth and wine and bring to a boil.

Remove the lid and fluff with a fork.
Serve hot.
