Ingredients
- 1 cup long-grain white rice
- 1 teaspoon salt
- 2 tablespoons olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1/2 cup dried apricots, chopped
- 1/2 cup slivered almonds
- 1/2 cup chicken broth
- 1/4 cup white wine
Directions
- Rinse the rice in a sieve and set aside.
- Heat the oil in a large skillet over medium-high heat.
- Add the onion and cook until softened, about 5 minutes.
- Add the garlic and cook for 1 minute.
- Stir in the apricots and almonds and cook for 1 minute.
- Stir in the rice and salt and cook for 2 minutes.
- Add the broth and wine and bring to a boil.
- Reduce the heat to low and simmer, covered, for 15 minutes.
- Remove the lid and fluff with a fork.
- Serve hot.
