Ingredients

  • 1 cup long-grain white rice
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup dried apricots, chopped
  • 1/2 cup slivered almonds
  • 1/2 cup chicken broth
  • 1/4 cup white wine

Directions

  1. Rinse the rice in a sieve and set aside.
  2. Heat the oil in a large skillet over medium-high heat.
  3. Add the onion and cook until softened, about 5 minutes.
  4. Add the garlic and cook for 1 minute.
  5. Stir in the apricots and almonds and cook for 1 minute.
  6. Stir in the rice and salt and cook for 2 minutes.
  7. Add the broth and wine and bring to a boil.
  8. Reduce the heat to low and simmer, covered, for 15 minutes.
  9. Remove the lid and fluff with a fork.
  10. Serve hot.
