Ingredients

  • 2 tablespoons olive oil

  • 2 large zucchinis, sliced into 1/4-inch thick rounds

Directions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the garlic, oregano, thyme, salt and pepper and cook for 1 minute.
  3. Add the zucchini slices and cook for 5 minutes, stirring occasionally.
  4. Reduce the heat to low and cook for an additional 5 minutes, stirring occasionally.
  5. Serve warm.
