Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup balsamic vinegar

  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • 4 slices fresh mozzarella cheese

Directions

  1. In a small bowl, whisk together the balsamic vinegar, honey, olive oil, minced garlic, dried basil, dried oregano, salt, and black pepper.
  2. Place the chicken breasts in a zip-top bag and pour the marinade over them. Seal the bag and massage the marinade into the chicken. Let it marinate in the refrigerator for at least 30 minutes or up to overnight.
  3. Preheat your grill or grill pan over medium-high heat. Remove the chicken from the marinade, discarding any leftover marinade.
  4. Grill the chicken for about 6-8 minutes per side or until cooked through, with an internal temperature of 165°F (75°C).
