Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh basil, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons extra virgin olive oil
  • 1 clove garlic, minced
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Directions

  1. Rinse the quinoa under cold running water. In a medium saucepan, bring the water to a boil. Add the quinoa and reduce heat to low. Cover and simmer for about 15 minutes or until the quinoa is tender. Remove from heat and let it cool.
  2. In a large mixing bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red bell pepper, red onion, basil, and parsley.
  3. In a separate small bowl, whisk together the balsamic vinegar, olive oil, minced garlic, Dijon mustard, salt, and pepper until well combined.
  4. Pour the dressing over the quinoa and vegetables. Toss gently to coat everything evenly.
  5. Cover the bowl and refrigerate for at least 1 hour to allow the flavors to meld together.
