Ingredients

  • 2 pounds milk fish, scaled and gutted
  • 1 cup milk
  • 1/2 cup heavy cream
  • 2 cloves garlic, minced
  • 1 onion, sliced
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon paprika
  • Fresh parsley, for garnish

Directions

  1. Preheat the oven to 375°F (190°C).
  2. Rinse the milk fish under cold water and pat dry with paper towels.
  3. In a small bowl, mix together the salt, black pepper, dried thyme, and paprika.
  4. Rub the spice mixture all over the milk fish, inside and out.
  5. In a large skillet, heat the butter and olive oil over medium heat.
  6. Add the minced garlic and sliced onion to the skillet and sauté until fragrant and translucent.
  7. Remove the skillet from the heat and stir in the milk, heavy cream, and lemon juice.
  8. Place the milk fish in a baking dish and pour the milk mixture over it.
  9. Cover the baking dish with aluminum foil and bake for 30 minutes.
  10. Remove the foil and continue baking for an additional 15 minutes, or until the fish is cooked through and flakes easily with a fork.
