Ingredients

  • 2 large eggplants
  • 2 ripe tomatoes
  • 1 large onion
  • 3 cloves of garlic
  • 1 teaspoon cumin powder
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric powder
  • 1/4 teaspoon cinnamon powder
  • salt, to taste
  • 3 tablespoons olive oil
  • Fresh cilantro, for garnish

Directions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the eggplants into 1-inch thick rounds. Place them on a baking sheet and drizzle with olive oil. Bake for about 20-25 minutes or until the eggplants are tender.
  3. In the meantime, dice the tomatoes and chop the onion and garlic.
  4. Heat 2 tablespoons of olive oil in a large pan over medium heat. Add the onions and garlic and sauté until they turn golden brown.
