Ingredients
- 2 tablespoons olive oil
- 1/2 red onion, sliced
- 1/2 green bell pepper, sliced
- 1/2 red bell pepper, sliced
- 1/2 cup salsa
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 lime, juiced
- 1 pound chicken breasts, cut into thin strips
- 8-10 fajita-sized tortillas
Directions
- Preheat oven to 375 degrees F.
- In a large bowl, combine olive oil, onion, bell peppers, salsa, chili powder, garlic powder, cumin, smoked paprika, cumin, salt, and pepper. Mix until all ingredients are evenly incorporated.
- Add chicken strips to the bowl and mix until all the chicken is well coated in the mixture.
- Spread the chicken and vegetables on a baking sheet lined with parchment paper or aluminum foil.
- Bake in preheated oven for 15-20 minutes or until chicken is cooked through.
- Remove from oven and let cool for 5 minutes.
- Serve chicken and vegetables in warm fajita-sized tortillas with a squeeze of lime juice, if desired.
