Ingredients

  • 2 tablespoons olive oil
  • 1/2 red onion, sliced
  • 1/2 green bell pepper, sliced
  • 1/2 red bell pepper, sliced
  • 1/2 cup salsa
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 lime, juiced
  • 1 pound chicken breasts, cut into thin strips
  • 8-10 fajita-sized tortillas

Directions

  1. Preheat oven to 375 degrees F.
  2. In a large bowl, combine olive oil, onion, bell peppers, salsa, chili powder, garlic powder, cumin, smoked paprika, cumin, salt, and pepper. Mix until all ingredients are evenly incorporated.
  3. Add chicken strips to the bowl and mix until all the chicken is well coated in the mixture.
  4. Spread the chicken and vegetables on a baking sheet lined with parchment paper or aluminum foil.
  5. Bake in preheated oven for 15-20 minutes or until chicken is cooked through.
  6. Remove from oven and let cool for 5 minutes.
  7. Serve chicken and vegetables in warm fajita-sized tortillas with a squeeze of lime juice, if desired.
