Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 1 cup long-grain white rice
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon smoked paprika
  • 1 teaspoon sea salt
  • 2 cups vegetable broth

Directions

  1. Heat the olive oil in a large saucepan over medium heat. Add the onion and bell pepper and sauté for 3-4 minutes, until softened.
  2. Add the garlic and cook for 1 minute.
  3. Add the rice and cook for 1 minute, stirring constantly.
  4. Add the oregano, basil, paprika, and salt and stir to combine.
  5. Add the vegetable broth and bring the mixture to a boil. Reduce the heat to low and cover the pan.
  6. Cook for 15-20 minutes, until the rice is cooked through and the liquid has been absorbed.
  7. Fluff the rice with a fork and serve.
