Ingredients
- 2 tablespoons olive oil

- 1 bell pepper, diced
- 3 cloves garlic, minced
- 1 cup long-grain white rice

- 2 cups vegetable broth
Directions
- Heat the olive oil in a large saucepan over medium heat. Add the onion and bell pepper and sauté for 3-4 minutes, until softened.
