Ingredients
4 slices bacon, diced
1/2 cup mushrooms, chopped
2 cups spinach, chopped

Directions
Preheat oven to 350°F.
In a large skillet, cook bacon until crispy. Remove bacon and set aside.
Add mushrooms and spinach to the skillet and sauté until tender. Remove from heat and set aside.
In a medium bowl, whisk together eggs, milk, and salt and pepper.
Spray a 9-inch ovenproof skillet with nonstick cooking spray. Add bacon, mushrooms, spinach, and Gouda cheese and stir to combine.
Pour egg mixture into the skillet and stir to combine. Place in preheated oven and bake for 20 minutes or until set.
Remove from oven and let cool slightly before serving.
