Ingredients
- 1 ½ cups heavy cream
- ¼ cup sugar
- 2 tablespoons unflavored gelatin
- 2 cups coconut milk
- ¼ cup cold water
- 1 teaspoon vanilla extract
- 1 cup fresh raspberries
- 1/3 cup sweetened shredded coconut
Directions
- In a medium bowl, whisk together the cream and sugar until soft peaks form.
- In a separate bowl, combine the gelatin and cold water. Let it sit for 5 minutes.
- In a medium saucepan, heat the coconut milk over medium heat. Add the gelatin mixture and whisk until fully dissolved.
- Remove the pan from the heat and whisk in the vanilla extract.
- Pour the coconut mixture into a 9-inch springform pan. Place in the refrigerator and let chill for 30 minutes.
- Remove the pan from the refrigerator and top with the whipped cream. Sprinkle with the raspberries and shredded coconut. Refrigerate for at least 1 hour before serving.
