Ingredients
- 3/4 cup all-purpose flour
- 3/4 cup whole wheat flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/3 cup melted butter
- 1/2 cup sugar
- 1/3 cup orange juice
- 1 teaspoon grated orange zest
- 1/2 cup chopped walnuts
- 1/2 cup raisins
Directions
- Preheat oven to 375°F (190°C). Grease 12 muffin cups or line with paper muffin liners.
- In a medium bowl, combine the flours, baking powder, baking soda, salt, cinnamon and nutmeg. Mix well.
- In a separate bowl, cream together the butter and sugar. Beat in the orange juice and zest until smooth.
- Add the dry ingredients to the wet ingredients and mix until just combined. Fold in the nuts and raisins.
- Fill the prepared muffin cups with the batter. Bake for 18 to 20 minutes or until a toothpick inserted in the center comes out clean.
- Cool the muffins in the pans for 10 minutes before removing and cooling completely on a wire rack.
