Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon ground coriander
  • 1 tablespoon olive oil
  • 1/2 cup chicken broth
  • 3 tablespoons mole paste
  • 1/4 cup chopped cilantro
  • Salt and pepper, to taste
  • 12 taco shells

Directions

  1. In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook for 3-4 minutes, until lightly browned.
  2. Add the onion, garlic, cumin, chili powder, and coriander. Cook for 2-3 minutes, stirring occasionally.
  3. Transfer the chicken and vegetables to the Instant Pot. Add the chicken broth and mole paste, stirring to combine.
  4. Secure the lid on the Instant Pot and set the valve to sealing. Cook on high pressure for 10 minutes.
  5. Quick release the pressure and open the lid. Use two forks to shred the chicken.
  6. Stir in the cilantro and season with salt and pepper to taste.
  7. Serve the chicken in taco shells and enjoy!
