Ingredients
2 cups cooked sushi rice
½ cup seasoned rice vinegar
1 avocado, sliced
1 carrot, julienned
1 cucumber, julienned

Directions
In a bowl, combine the cooked sushi rice and seasoned rice vinegar, and mix well.
Lay a sheet of nori seaweed on a cutting board or bamboo sushi roller.

Arrange the avocado, carrot, cucumber and bell pepper over the rice.
Roll the nori sheet over the vegetables, using a bamboo sushi roller.
Repeat the process with the remaining nori sheets and vegetables.
Cut the rolls into 1-inch pieces and serve with soy sauce.
