Ingredients

  • 2 cups cooked sushi rice
  • ½ cup seasoned rice vinegar
  • 1 avocado, sliced
  • 1 carrot, julienned
  • 1 cucumber, julienned
  • 1 bell pepper, julienned
  • 4 sheets nori seaweed
  • Soy sauce, for serving

Directions

  1. In a bowl, combine the cooked sushi rice and seasoned rice vinegar, and mix well.
  2. Lay a sheet of nori seaweed on a cutting board or bamboo sushi roller.
  3. Spread a thin layer of the sushi rice over the nori sheet.
  4. Arrange the avocado, carrot, cucumber and bell pepper over the rice.
  5. Roll the nori sheet over the vegetables, using a bamboo sushi roller.
  6. Repeat the process with the remaining nori sheets and vegetables.
  7. Cut the rolls into 1-inch pieces and serve with soy sauce.
