Ingredients
- 1 cup graham cracker crumbs
- 3 tablespoons butter, melted
- 2 avocados, peeled and pitted
- 1/2 cup white sugar
- 1/4 cup lime juice
- 1/4 teaspoon salt
- 1/3 cup heavy cream
- 1/2 teaspoon vanilla extract
Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch pie pan.
- In a medium bowl, mix together the graham cracker crumbs and butter until the mixture is crumbly. Press onto the bottom and sides of the prepared pie pan.
- Bake for 8 minutes in the preheated oven, or until lightly browned. Remove from oven and set aside.
- In a blender or food processor, blend together the avocados, sugar, lime juice, salt, cream and vanilla extract until smooth.
- Pour the filling into the prepared crust and smooth the top. Refrigerate for 4 hours, or until set.
